Retes (Strudel Recipe)
3 cups bread flour
- 1 egg
- 1 tablespoon lard (butter)
- 1/2 teaspoon salt
- 1 cup lukewarm water
- 1 teaspoon vinegar
Put flour into a large bowl. Make well in center. Add egg, lard (butter) and salt. Stir in slowly the water and vinegar, to make a soft dough. Turn dough out on lightly floured board. Knead well for 15 minutes with both hands, slapping dough back and forth until dough comes away clean from board. Shape dough into a large ball. Let it rest in a floured bowl. Cover with warm lid for about 25 minutes.
Cover kitchen table with clean cloth. Sprinkle with flour. Put dough in center. Roll out until very thin. Brush with 1 tablespoon lard or butter. Pull dough with hands (palms downward, to avoid tearing dough with fingers). Pull dough out gently, until it covers the table, letting the thicker edges hang over the side of the table. Dough should now be stretched out to proper thickness. Brush again with melted butter or lard.
Spread with apples, pot cheese, walnuts, cherry or your favorite filling. Carefully lift cloth from one end and dough will roll itself up like a jelly roll. Cut into lengths of your baking pan. Brush top of strips with melted butter, and bake in 400 degree oven for 35-40 minutes on the cookie sheet.
**This recipe takes a little time to master because of the dough. Just take your time and remember practice makes perfect! Servings vary due to size of strips, 4-8 depending on the sweet-tooth of the person eating**
