(What I like about this recipe is that, other than making a traditional Hungarian version, I can “mix” it up and use other meats and even seafood instead of the beef/pork mixture.  All you need is some imagination!  My hubby likes to make this using seafood and Cajun spices) 🙂

Hungarian Stuffed Peppers (Toltott Paprika)

  • 1 lb. ground beef and pork mixed
  • 1 large/medium onion
  • 1 cup rice (washed)
  • 1 T salt (to taste)
  • 1/2 t black pepper (to taste)
  • 1 cup tomatoes or tomato purée
  • 6-8 green peppers

Prepare peppers by cutting off tops.  Remove seeds and scrape insides with teaspoon/wash.  Mince and brown the onions in oil.  Pour this in a bowl and mix with meat, rice and seasonings.  Fill green peppers about half full with mixture of rice and meat.  Place peppers in deep pot.  Pour on tomatoes and enough water to almost cover peppers.  Simmer for 1 hour or until rice is cooked.  Enjoy  ~Kati

  2. Try ground turkey. Also use the crock pot/slow cooker. Cook one extra pepper to keep for Stuffed Pepper soup. Yum.
