Turkey in Rabakoz Style

This particular recipe is from the Western Transdanubia Region: 

“Turkey in Rabakoz Style” 

Ingredients for 4 people:

  • 1.3 lb. turkey
  • 5.25 oz. green peas
  • 4.55 oz. mushrooms
  • 0.6 cup oil
  • 1 oz. salt
  • 2.8 oz. flour
  • 1 bunch parsley
  • 4 small apples
  • 7 oz. pork marrow
  • 5.25 oz. carrots
  • 2.1 oz. onions
  • 1.4 oz. butter
  • crushed pepper
  • 0.6 cups dry white wine
  • 1.7 oz. bacon
  • peach and plum preserve
  • (four servings mashed potatoes with egg) (pommes duchesse)

Preparation:  Cut four equal slices of turkey filet, season with salt and crushed pepper.  Prepare a ragout: fry finely chopped onion in oil, add cleaned and chopped marrow with bacon, season with salt and pepper also.  Prepare carrot and mushroom, clean green peas, cook all three vegetables separately.  Let separately cooked vegetables cool in their water, let drip and add each to ragout.  Sprinkle with a little flour and chopped parsley, and white wine.  Bring to broil once, keep warm.  Fry prepared turkey fillet in heated oil, steam apple slices in same oil.  Line fireproof dish with melted butter, insert apple slices, sprinkle with rest of butter and place on turkey fillet.

Fill tube with egg-potato paste, decorate meat all around place ragout in the middle and brown in very hot oven or under a hot grill.  When potato is red, place o previously heated plate using a long-handled spatula, serve with plum and peach preserves. Enjoy~ Kati
