“Pork Chop Steamed in Rhine Riesling of Balatonboglar”
Ingredients for 4 persons:
- 2 lbs. pork chops
- 1 cup Rhine Riesling of Balatonboglar
- 2.5 oz. smoked bacon
- 1 apple
- 1 tablespoon tomato paste
- 1 pound red cabbage
- 1.75 oz. flour
- vinegar, sugar, salt, oil
Leave red cabbage to sit for 1/2 hour after cutting it into thin slices and applying a little salt. Pound slices if pork chops, season with salt, coat with flour, fry both sides until red in a little hot oil. When ready, take it out and brown tomato paste in the dripping for 1-2 minutes. Dilute with 1/2 cup Rhine Riesling of Balatonboglar and a little water. When simmering, add pork chops and cover, cooking until tender. While meat is steaming over low heat, chop smoked bacon into tiny bits and fry until transparent. Add half a teaspoon of vinegar and 1/4 cup water. Add red cabbage, half a teaspoon of sugar. Add peeled sections of apple, pour 1/4 cup Rhine Riesling of Balatonboglar and stream it covered until ready.
When serving, move cabbage to one side of the dish and place pork chops next to it, sprinkle it with its broth. Serve with fried potatoes.
