Szekely Torta

(I believe I’m developing a sweet tooth)

“Szekely Torta” 

  • 3 C flour
  • 1/2 C sugar
  • 1/2 lb. sweet butter
  • 1/4 t. salt
  • 1 egg
  • 1 lemon
  • 1 t. baking powder
  • 2 T. sour cream

Sift flour, baking powder and salt and combine by hand in a bowl.  Blend in the butter as for pie crust.  Combine juice and grated lemon rind, egg, sour cream and sugar in separate bowl and add to flour mixture.

Save dough (size of an egg) and roll out the rest to size of pan about a half-inch thick.  Press into greased and floured pan.  Spread dough with apricot/strawberry or raspberry jam.  Set aside and prepare following filling:

“Filling for Szekely Torta”

  • 4 eggs, separated
  • 1/2 C sugar
  • 1 lb. ground walnuts
  • 2 T. cracked meal or bread crumbs
  • 1 t. vanilla

Mix egg yolks, sugar and vanilla well with electric beater.  Add walnuts and cracker meal.  Beat egg whites until stiff. Fold into first mixture.  Now pour over jam-spread dough.  Roll and cut saved dough with pastry wheel into strips.  Put strips at cross angles for lattice effect and bake.  Do not invert cake but cut into small squares or diamond shapes for serving.  Oven: 350 degrees; Time: 30-40 minutes; pan: 10″ x 13″ x 2 1/2″ Enjoy, Kati~
